4 cups basil leaves
1 cup of shredded mozzarella
1 cup of extra-virgin olive oil
1/3 cup pine nuts or walnuts
5 cloves of garlic
salt and pepper to taste
1) Put pine nuts or walnuts in a pan. Heat over medium heat till you smell the fragrant of the nuts. It only takes 2-3 mins, keep your eyes on them while toasting as they burn easily.
2) Combine all ingredients in a blender or food processor. Mix well. Add salt and pepper to taste.

You made a big container of this (w/out nuts) and I have to say it has been AMAZING. I've found so many uses for this pesto topping that I didn't think of before: a spread on toasted bread, using it atop pasta, using it on meats during cooking ... Wow. TASTY.

It's really easy :) Just throw everything into a food processor or blender and let the machine do all the hard work!

I've always been too intimidated to try this. But you make it sound so easy. I've got plenty of basil growing I may have to give it a try!
