10 big/Roma tomatoes, quartered
1 cup yellow or red onion, chopped
4 cloves garlic, whole
2 tsp kosher salt
1 tsp red pepper flakes
1/2 cup olive oil
4 tablespoon tomato paste (optional, makes sauce a deeper red in color)
1/2 cup fresh basil, thinly sliced
1) Preheat oven to 450F
2) Combine all ingredients, except basil, in a large casserole dish. Toss well.
3) Roast in oven for about 40 - 50 mins until tomatoes have soften. Remove from oven and mash with a potato masher. Keep tomatoes a bit chunky.
4) Stir in fresh basil.
